Learning Outcomes
On the successful completion of this module students will be able to:

1.Evaluate the technologies used in the production of milk powders; explain unit operations fundamentals and practices for evaporation and drying; explain concentrate handling.

2.Identify the critical steps in milk handling, milk treatment and standardising of milk when manufacturing good quality milk powders.

3.Monitor the factors which affect milk powder quality, flavour and functionality; explain fire suppression and drier safety in the context of powder manufacturing.

4.Explain the differing uses and applications of milk powders, including nutritional powders and infant formula, and the importance of controls to ensure products are aligned to specifications.



5.Demonstrate the ability to supervise the efficient operation of a section of a dairy manufacturing plant involved in these processes. Interpret data and solve a range of familiar and unfamiliar problems that may be encountered in these processes so as to improve product functionality, safety and quality.

Teaching and Learning Strategy
Teaching and learning methods will include:

- Inquiry based learning, problem solving and discussion

- Guest lectures
- Visit to a powder manufacturing site
- Theoretical face-to-face and online sessions including workbooks, lectures, workshops, group activities, discussion, independent learning, and assignments.
Learning and Teaching Resource
An extended reading list will be supplied by the lecturer at commencement of the module which will be updated annually.
Guest lectures and visits to appropriate manufacturing plants will be arranged.
