Understand quality management tools and controls to ensure dairy products are made safely
Describe internal quality management tools and external controls that are operated and maintained on a dairy manufacturing site to ensure dairy products are made safely
Demonstrate knowledge of sampling and testing regimes for dairy products
-Quality management tools and controlling diary product safety
-Internal quality management tools on a dairy manufacturing site
-Health and Safety in Employment Act (HSE) Act 1992, The Animal Products Act 1999, and company quality, environmental and hygiene requirements
-Key external quality management controls
-Overseas Market Access Requirements (OMARs) and General Requirements for Export (GREXs) outlined by the Ministry of Primary Industries
-Sampling and testing regimes for dairy products
Teaching and Learning Strategy
Learning will be facilitated using a range of teaching and learning methods, which may include:
-Practical - laboratory; practical or workshop sessions and activities; demonstrations
-Theory - includes web-supported tutor facilitated/directed presentations; lectures and tutorials; group activities; peer presentations and review; group/individual research; online learning activities; case studies; guest speakers

Assessment in this module is achievement-based. The portfolio is comprised of multiple assessment tasks. To pass this module all tasks must be submitted and an overall minimum pass mark of 50 is required.
