Learning Outcomes
On completion of this module students will be able to: 1.Critically analyse changes that occur in food under various processing conditions. 2.Evaluate the mechanisms of food product deterioration and apply appropriate control strategies to ensure quality and safety throughout processing. 3.Develop an innovative food product and design its manufacturing process, integrating appropriate control and condition detection technologies. 4.Appraise a cleaning/sanitation system with references to key principles of soil removal from process surfaces and plant sanitation. 5.Investigate and critically assess a new technology in food processing, with reference to their applicability, effectiveness, and potential impact on the New Zealand food industry.
Assessment Criteria
This is an achievement-based module in which students must gain an overall grade of 50% to pass.
