LO2 Review the basic principles of fluid properties and associated laws including static and in motion fluids.
LO3 Review a range of heat transfer applications in processing industries.

- Process Flow diagrams
- Mass and energy flow
- Balance calculations
- Fluids and their properties; i.e., density, viscosity, pressure, Reynolds No.
- Pressure in static systems: pressure, manometers, atmospheric pressure, barometry
- Fluids in motion; applications of Bernoulli to flow measurement
- Viscosity of fluids, viscosity measurement, and various different fluid properties in relation to viscosity
- Pumps and pump selection
- Different types of heat exchangers and their associated calculations
- Heat transfer principles
- Heat transfer applications and their associated calculations
- Separation unit operations - Mixing and size reduction unit operations
- Drying and evaporation
- Size reduction
- Mixing and separation
- Social, ethical, and cultural implications of food processing

Teaching and Learning Strategy
Learning and teaching activities will employ a range of elements drawn from approved methods to align with the context of the learning (delivery mode, regional specific requirement, etc.) and any particular needs of the group of aakonga.
Assessment Criteria
Assessment in this course is achievement-based. Aakonga must submit all specified assessment items and obtain at least 50% overall score in order to pass this course. Aakonga will be advised of all matters relating to summative assessment at the start of the course.
